I’ve always loved pesto, however, I never wanted all the fat from the parmesan cheese. This is why I created my own version that’s not only yummy but vegan and contains zero saturated fats! I guarantee that you will be eating it by spoonfuls. Trust me…as soon as I made it my cousins started devouring it and licking the bowl clean. I want to share with you one of my favorite recipes by far that is packed with nutrient dense ingredients such as avocado and hemp seeds.
This pesto is not only simple to make but also packed with healthy fats and protein. Made from all fresh ingredients, this pesto will leave you feeling satisfied and guilt-free!
- 1 Ripe Avocado
- 1 cup Fresh Basil
- 1/3 cup toasted Pine Nuts
- 1/4 cup toasted Hemp Seeds
- 2 tbsp Olive Oil
- 3 cloves Garlic
- Juice of 1 Lemon
- Salt and Pepper
- In a blender ( I used my Vitamix), blend together the avocado, basil, oil, nuts, seeds, garlic, juice of 1 lemon.
- Add salt & pepper as desired.
Enjoy this pesto on top of pasta, pizza, fish, chicken…Top your toast with some of this creamy goodness…or eat it by the spoon (as my cousins love to do!)
